Don Diego Jimenez Luna is a Mayan micro producer belonging to the Tzeltal ethnic group. Coffee did not arrive in Chiapas until the 1970s,
so before that he grew sugar cane. He is of a very advanced age, so his whole family is helping with this production. Don Diego's small plots grow peacefully in the shade of the chalums and primary forest
of Chiapas. During harvest, the temperatures are rather low so
the fermentation time often reaches 48 hours and drying usually
lasts 7 days with some temporary interruptions due to rain.
