Costa Rica Finca Las Lajas Black Honey

Las Lajas is one of the most well-known micro mills in Costa Rica and within the specialty coffee industry, famous for their unique and exceptional drying techniques for natural and honey processed coffees.

Located in the central valley in the province of Sabanilla near Volcano Poas, the Las Lajas micro-mill is managed by Oscar and Francisca Chacón. Their passion for coffee and their dedication have led them to experiment with a range of different preparations such as yellow, red and black honeys.

The Black Honey process is a Las Lajas specialty and has been developed and refined over the seasons. This is the longest honey process used at Las Lajas, and involves the coffee being left unmoved for a period of 24 hours. Francisca and Oscar's main motivation is to produce a cup which expresses the finesse, harmony and complexity inherent to their coffees.
